Amongst our hand-picked range of various wines, there are old friends that we have followed for years, exciting new comers sourced from smaller growers and a range of carefully selected fine wines. Vivid description of the bouquet and taste can reveal the characteristic merits of wine, sink into the mind and give the wine a special significance. This process can be compared with inspection under the guidance of an art gallery, many years studying the works of an artist: at once you begin to capture the nuances to which had never paid attention.
For a long-term storage of wine, especially fine wines - a period which can last from five to twenty years or even longer - a good cellar is needed, where wine can ripen on its own, without being subjected to harmful effects of heat, light and shaking. The ideal wine cellar has a low temperature, and continuously, is sufficiently moist and well ventilated. Such conditions naturally exist in the underground cellars. In any case, the optimum temperature ranges from 10 to 14 °C. Temperature below this level will slow the ripening of wine, but without causing any other damage, the higher temperature will force the wine to mature too quickly, that will prevent it from developing its best qualities. The temperature must be constant as possible: even in the best cellars, it varies in different seasons, but the abrupt change in temperature can damage the wine.
Humidity prevents corks from drying up and penetration into the wine of such air volume, from which it can oxidize. Good ventilation and clean air without odors is also very important, as strong odors or stale air can penetrate into the bottle through the cork and spoil the wine.
Mostly bottles of wine destined for a long-term storage are stored in a horizontal position, so that the cork would be in contact with the wine, that wine would be breathing, but corks would be not dry.
In specially constructed cellars wine is kept in bins or niches, usually made of concrete. And the bunker contains bottles of wine of the same name and year's crop. If in the bunker there are bottles of wine of two or more names and different years of harvest, they share the wooden planks to make it easier to take the bottle from the upper ranks. Each bunker has a label indicating which wine it contains.
Separate bottles of various wines are kept on the shelves so that you can take one bottle, without disturbing others.
As you can see, having one's own wine cellar is a difficult complicated procedure to keep wine in best conditions. But at the same time our thoroughly created wine collection similar to a good large library with lots of rare literature items.
